A Chocolate Cookie and a Candy - With NO Processed Sugar
50I have a healthy sweet tooth, a sweet tooth that is thriving; I mean healthy.
I also have a Healthful sweet tooth. Because I have MS and eat mostly organic food; I have a healthful sweet tooth too.
For Valentine's Day, you could form either of these desserts into a heart shape.
The Cookie could be cooked as a large heart (lower the temp to 300 and watch it about 25-30 minutes) and then break it up as a puzzle in a gift box.
The Candy needs to be shaped as a heart while it is hot. Break it when it cools/hardens? or not?
The Cookie
This is the double batch that we make so we can always have cookie dough in the fridge and in the freezer.
We have burned out 3 regular mixers and one Sunbeam stand mixer. We invested in a KitchenAid Stand Mixer from Costco.
Recipe (everything that can be Organic should be)
Blend
3 sticks Real Butter
1/4 C. Coconut Oil
2 C. Honey
Add and mix well
3 eggs
Add and mix well
1 1/2 t. Baking Soda
1 1/2 t. "Real Salt" (this is a brand, it clumps and still has the minerals, not processed)
1T. Real Vanilla
2t. OG Ground Cinnamon
Add slowly
6 C. OG Sifted Spelt (this taste most like white flour, Vita Spelt is the brand)
3 C. Organic Roll Oats
(or Cinnamon Apple-Raisen Granola is even better, Golden Temple is one brand)
1 1/2 C. Coconut (unsweetened finely shedd
ed)
2 bags Sunspire Grain-sweetened Chocolate Chips
Our cookies are large, 325-350 degrees, for 20 minutes.
The Candy (extreme EASY)
This COULD be made with any Chocolate chips but if you want the best, you need Sunspire Grain-sweetened Chocolate Chips. Did I mention my Healthy sweet tooth? Well, I buy these by the case! BTW Christmas time they go on sale.
Recipe
Microwave 'til soft to stir smooth, about 1 minute (or on stove)
- 1 bag of Chocolate Chips
Stir smooth then add
- 2 T Honey
stir well, then let set for 5 minutes, then add
- 1 C. OG Raisens
- 1 C. Raw Pecans (I like pieces)
- Enough unsweetened OG Finely Shedded Coconut to soak up the chocolate and 'clean' the bowl. (about 1 C.)
Scatter clumps on wax paper. refrigerate an hour or two until firm.
